** Eğer şaraplardan ayık kalabilirseniz, Şirince' nin ne kadar güzel bir yer olduğunu görebilirsiniz! :D

İzmir'in Selçuk ilçesine bağlı ve Selçuk'a 8 km. mesafede tarihi mimarisi korunmayı başarılmış turistik bir köydür.

Hej.

Matusalem Gran Reserva is an old friend. I think we first met many years ago when I was tending bar

Matusalem Gran Reserva is an old friend. I think we first met many years ago when I was tending bar at the Blue Water Café in Yaletown, but we didn't become really tight pals until we buddied up at my stint at Lumière. It was one of several rums in my well, and over my tenure we became quite close.

But then Seattle called, and while my dear friend came with me, she seemed to play second fiddle to new, exciting rums such as the Ron Zacapa 23 Year and the Zaya 12 Year, even though they held different places in my repertoire of Sugarcane Companions.

Microsoft's "ding!" of new email soon changed the situation, asking me if I was willing to try a sample of Matusalem Gran Reserva. "Abso-freekin-lutely!" was the quick (and sane) reply. While I naturally knew this bottle, it had been a long time since we had a good sit down.

And so sure enough, just the other day I got a knock on the door and there she stood, in all of her elegance, not the least put off that we had not spent much time together in the last year (she always did have class). I invited her in, got a glass, and we talked about old times. As the minutes slipped into hours we waxed nostalgic, as if not a minute had passed between us. Every bit as witty and complex as I remembered her, I decided to whip up a cocktail much used in my old Lumière days, the Waldorf-Astoria's:

HOP TOAD

1 ½ Matusalem Gran Reserva rum
¾ oz Apricot liqueur (I used Giffard's Abricot du Roussillon)
½ oz lime juice
2 dashes Angostura bitters
shake with ice and strain into a chilled cocktail glass

While the Gran Reserva is a fine sipping rum, I've also found that she plays along well with other ingredients, especially ones like apricot, passion fruit and mango. Because she is an elegant spirit, go easy with citrus, as you don't want those harsh acids to overtake Matusalem's subtle nuances of bittersweet caramel, maple and vanilla.

Matusalem blends in perfectly with the apricot and the lime in the Hop Toad. If you can't get Giffard's Abricot then I suggest Rotham & Winter's Orchard Apricot, but a quality apricot brandy/liqueur is a must in this cocktail. Cocktails, as with all things in life, are only as strong as their weakest link, so by ensuring that we are using a premium rum, quality liqueur and fresh lime juice we know that our libation has a good basis from which to start.

Happy mixing, and until next time!

As summer nears its end and school starts up, one may be thinking it is also time to put away the cocktail glasses and prepare for the winter months ahead. Not so. Moët Hennessy strives to keep the spirit of summer alive.

Earlier this summer 10 Cane Rum released a limited edition premium Mojito Kit in conjunction with Stirrings, the makers of Cocktail Mixers and Rimmers. The 10 Cane Mojito Kit has been such a smash hit since its release, it disappears from shelves almost as soon as it is stocked. The reasons are obvious.

10 Cane Rum is a sensational find. This premium rum is a cut above the rest and unlike traditional rums. As Moët Hennessy defined it upon release; 10 Cane Rum is “rum’s redemption”. This redemption goes back to the strict standards 10 Cane places upon itself from harvest to bottling the product. 10 Cane harvests in small batches (ten bunches of sugar cane stalks at a time), hence the name; 10 Cane. This particular rum is distinctive in that it is made from the first pressings of the sugar cane stalks immediately after harvest. Typical rums are made from the byproduct of sugar which we know as molasses. 10 Cane also uses imported pot stills for small batch, slow distillation. Lastly, Limousin oak barrels age the rum to 10 Cane perfection.

Stirrings is a company started by two former bartenders living the dream of “great food and drinks, enjoyed with friends is an absolute.” Sometimes one idea (a margarita rimmer using mint, cilantro, lime and sea salt) becomes a company; Stirrings. Stirrings strives to lead people to think about their cocktails the same as they do their food: quality ingredients pave the way to exceptional experiences in the way of taste and in the memories we share with friends. This is exactly what the pairing of 10 Cane Rum and Stirrings does with the premium Mojito Kit.

The Mojito’s popularity is clearly seen in its resurgence on cocktail menus across the nation. In some cases the Mojito is completely crowding out the ever popular pink Cosmopolitan. And forget about staying true to the traditional Havana Club Mojito of muddling mint, sugar cane and limes as the only way to go. No. Now the flavors of Mojitos are endless and no muddling is necessary. With the pairing of 10 Cane Rum and Stirrings you may have your premium rum, flavor and ease of preparation, too!

I sampled this Mojito Kit and found it to be rather good for a bottled kit. The 10 Cane Rum of course is one of my favorite rums for cocktails. The flavor profile is excellent for Daiquiris and Mojitos particularly. I wrote it up before in the Ultimate Mojito. The Stirrings recipe on the bottle is a little sweet for my taste, but possibly not yours. I always lean more towards the tart than sweet. I definitely recommend squeezing the lime garnish into the cocktail. The mint is not as defined as a muddled Mojito, but that is to be expected. If you want a little more mint flavor, just bruise a mint leaf in your hand and drop it in. The natural oils will disperse within the drink itself. The point of this kit is ease. It makes an excellent quick Mojito for friends, parties or sitting out on the deck relaxing without having to go through all the motions of making individual Mojitos the old-fashioned way. The beauty of the bottle is you can work with the ratio to get exactly the taste you want for your cocktail. In addition, Stirrings has a wide variety of other cocktail mixers that are equally as tasty with rimmers to add an additional punch of flavor. Be sure to check them out. You’ll be glad you did. Stirrings is not your typical shelf mixer. They are quality in a bottle. 10 Cane Rum choosing Stirrings as a pairing partner is testimony to that.

While the 10 Cane Rum Mojito Kit may not still be available on shelves near you, 10 Cane Rum is always available on a top shelf. Stirrings may be found year round as well at a few retail locations and always online. Below is the recipe from the bottle as well as a multitude of recipe ideas found at Stirrings using the Mojito Mixer and some of their other flavors to create more flavored Mojitos. Cheers!

The Mojito is a cooling effervescent cocktail inspired by Havana’s blithe lifestyle in the 1920’s. While Hemingway’s Cuba is long gone, its spirit lives on in this sparkling blend of sugar, mint, and lime.

In researching other reviews for 10 Cane Rum, I came across a fascinating and thorough review by Jack Bettridge on the Cigar Aficionado website. This review was posted April 14, 2005 before 10 Cane Rum released nationwide. He had quotes from the creator of 10 Cane Rum, distiller Jean Pineau. One such quote I found especially interesting was Pineau’s inspiration behind 10 Cane:

"I sucked on a cut cane in a field and decided that taste of raw sugar juice was what I ultimately wanted to bring to the spirit."

After all, some semblance of the sugar cane in its freshest state is what we want out of our rum isn’t it? If you have the time, read Jack Bettridge’s review, Rum’s Salvation? in its entirety.

2 cups crushed ice, plus extra for chilling glass
2 ounces light rum
1-ounce freshly squeezed lime juice, strained of pulp
1/2-ounce Simple Syrup, recipe follows

If your glass is not chilled, do so by placing some crushed ice in it and set it aside while you prepare the cocktail.
Place the 2 cups of crushed ice into a cocktail shaker. Pour the rum, lime juice, and simple syrup over the ice, cover, and shake well. Remove the ice from your serving glass and strain the drink into it. Serve immediately.

Simple Syrup:
2 cups sugar
1 cup water

Place the sugar and water into a small saucepan over high heat. Bring to a boil. Decrease the heat to medium and cook, stirring occasionally, until the sugar is completely dissolved, approximately 3 to 5 minutes. Remove from the saucepan and allow to cool completely. Syrup can be stored in an airtight container in the refrigerator for up to a month.
Yield: 3 cups

Recipe retrieved from Alton Brown.

4 Asbach colas, 2 captain/colas, 4 vodka orange, 1 scotch. That is the roadmap from tonight. So far. Work's been suckin' blah blah, plus they're talking about laying people off again, so why not...just, why not. The fact that it's Monday night is irrelevant.

I do have an untouched bottle of Bacardi left here by a friend, but I'm debating the rations of ice left and what they should be spent on. Somehow, Bacardi never comes up in the top spot. The scotch is top shelf, but I'm putting it on top of this sweet mixer, which is probably a mortal sin. A proper mouthwash with it solves that, but it also nearly makes me gag. The burn going down is excellent as usual, but the fucking taste in my mouth is as bad as the stale, smoky air trapped in this fucking cubbyhole in the apartment; and like work, it all truly makes me want to throw up.

I'm house hunting, which is unreal in itself. I'm keeping my 13 year old bimmer on the road with electrical tape and brake fluid bottles every week, but it's working. Apparently there's a loophole in the home buying system where they don't care if you can get a car loan - fuck it, they'll give you a house! So, sure, I'm qualified, and looking. My agent has so far sent me every house in the motherfucking ghetto, but to his credit, they're fairly nice houses. I think I'm going to go outside the box and get something in a decent neighborhood; if I have to lose the pool to do it, well, y'know. Life is tough.

Shit, a fucking house. I have trouble getting 300 dollar unsecured credit cards. Say what now? But, to be honest, I've rebuilt all of that bad 20's anti-credit, and am now a responsible citizen. Maybe they can smell it on me. Or maybe they can smell the fact that my credit score has jumped over 100 points in two years. Either way, they need to get their noses out of my ass. Maybe they smell me giving up.

I'm semi-under the grid. Being completely off the grid would be awesome, but outside of winning the lottery or walking down to the labor pool every day at 7am, I don't see a way to pull it off. The labor pool isn't that bad; I did it for a while. You walk down, sign up, and wait for a job to come up. Sometimes you wait for an hour or two and you are shit out of luck, but if you do get called, chances are it's some kind of new shitty job in some new area with some other shitty boss. The variety isn't all that bad. The work, maybe, but like today being Monday, that's irrelevant for this post.

I'm sure that made sense somehow.

A RUM REVIEW!
Flor de

Now away from the heavy tidings of past posts to something of a finer nature.

A RUM REVIEW!

Flor de Cana is a relatively new rum here in North Carolina.

The rum itself hails from Nicaragua. It comes from a distillery founded on a plantation in 1890. In 1937 the brand Flor de Cana was introduced by the company. According to the company in 2006 it had received 72 awards for excellence in five year. Impressive to say the least.

My sample was the Flor de Cana Gold 4 year old rum.

At the standard 80 proof it was of medium amber color and body.

I found the smells to be of oak and vanilla, much like the previously reviewed Barbancourt from Haiti.

The taste and feel I found however to be quite different. There were some vanilla notes and some caramel there..but they were thin. In fact although I found it altogether an adequate dark rum on the rocks, the whole idea of thin kept coming back to me. The finish was peppery.

I do recommend anyone seeking a dark rum experience try out Flor de Cana. It is definitely a step above most mass market rums. It is however not up to the level of Barbancourt 5 year old or Appleton Estate at this age. There was however character enough present for me to be intrigued as to what the 5,7, 12, and 21 year old rums from Flor de Cana are like.

If you are in need of a dark rum and want something different, for the price especially I recommend it. Probably not a sipping rum, but a nice change of pace from Bacardi dark.

3 out of 5 cigars.

Today is Mixology Monday, and this week we have a pretty difficult topic. Unfortunately, I had to do

Today is Mixology Monday, and this week we have a pretty difficult topic. Unfortunately, I had to do a wine cocktail, which made it even more difficult. If this were two hundred years ago, this would be easy peasy. Medford rum was the best in the world, and I live in the town next door. And, beyond rum, there was ahm, well, the water was almost decent, and they produced, well, they didn't produce bitters.

Wait? What the hell? The whole point of cocktails, at least according to Dr. Wondrich, was to import the best ingredients in the world, from the most exotic places in the world. So, I refuse to do a single Boston cocktail...But in the spirit of cooperation, I will pull a local cocktail from my home town of Chicago in the New York Sour, and one in my home away from home, Bermuda, where I spent my childhood in both the rum swizzle and the twilight fog cocktail.

First up is my drink from the Second City: The New York sour. Wait...What? Chicago drink...New York sour? This does not follow, but according to Dave Wondrich, it became quite the sporting thing in the City of Big Shoulders to top up your rye sour with just a bit of claret.

[caption id="attachment_197" align="alignleft" width="300" caption="A margarita glass allows the layering to shine."][/caption]

New York Sour from Imbibe by David Wondrich

1.5 oz - Rye Whiskey (Old Overholt)

.75 oz - Simple Syrup

.75 oz - Lemon Juice

.75 oz - Claret (Castillero del Diablo Cabernet Sauvignon)

Shake whiskey, syrup, and juice together, and float claret on top. Serve in a cocktail glass. Garnish with a flag.

I would use just a tad less lemon juice, and I also topped it up with a dash each of Peychaud's and Regan's orange bitters. This would also make a pleasant punch if topped up with a few ounces of ginger ale or lemon-lime soda for every serving. And now onto my childhood in Bermuda.

The rum swizzle is a classic of the Swizzle Inn in Bermuda, and quite possibly my mother's favorite drink.

Rum Swizzle by the Swizzle Inn

1 oz - Dark Rum (Gosling's Black Seal)

1 oz - Gold Rum, preferably Bajan (Mount Gay Eclipse)

.5 oz - Orange Cordial (Jaquin's Triple Sec)

.5 oz - Lemon Juice

1.25 oz - Orange Juice

1.25 oz - Pineapple Juice

.5 oz - Falernum (Paul Clarke's #10)

1 dash - Angostura Bitters

Shake all the ingredients together and serve over ice in a tall glass, or use twice the above recipe for every two guests and serve as puncheon. Garnish with a flag, straw, and swizzle stick.

But it wouldn't be MxMo without a Scrivenal Original, and this is no exception. On the other hand, if I didn't use ingredients local to somewhere it wouldn't be "local flavour." So, in that spirit, I update the good ol' dark and stormy (which I covered last month, here), into a modern cocktail, adding this bittering ingredient:

[caption id="attachment_198" align="alignright" width="300" caption="Or, you know, if you don't have a cocktail glass, you can just make a lot of excuses..."][/caption]

The Twilight Squall Cocktail

1.5 oz - Dark rum (Of course use Gosling's Black Seal)

.5 oz - Falernum (Paul Clarke's #10)

.5 oz - Ginger Syrup

.5 oz - Lime Juice

1 dash - Aromatic Bitters (Angostura)

2 dash - Pepper infused wine or spirits (Scrivenal Sherry Peppers #1)

1-2 oz. - Bermuda Stone Ginger Beer (Barret's or Regatta)

Shake all ingredients together, serve in a cocktail glass, top up with Barret's and garnish with a lime wedge, a cherry, and/or a cube of candied ginger.

Feel free to substitute Scrivenal Sherry Peppers #1 with Outerbridges sherry peppers or rum peppers, or of course, your own family's traditional recipe. However, my peppers are spiced with other spices so sub the falernum and ginger syrup with a third ounce each pimento ("allspice") dram, ginger syrup, and falernum to get the spice notes. You could also replace the ginger syrup with Canton or Giffard's ginger cordial.

This cocktail tastes quite similar to the dark and stormy which spawned it, and this is with fair intention. However, the falernum, bitters, and spiced sherry all combine to take this from a simple refreshing highball to a complex, gingery, rummy cocktail. While the dark and stormy is a great drink for the plantation porch or the sailboat cockpit, the twilight squall is cocktail for the dinner club in town or the yacht club bar.

Stay local,

If you’re drunk, and you have to pee, how close to the bathroom should you be before you take off

If you’re drunk, and you have to pee, how close to the bathroom should you be before you take off your pants and urinate?

The way bars sometimes are, what with drunken lollygaggers standing about, and music playing too loud to lugubriously communicate, dropping your pants before you get to the bathroom seems like a perfectly natural and clear signal to the other patrons that it’s in their best interest to get out of your way.

The one thing I would recommend you never do is take children to a bar; those little bastards can’t hold their liquor and they rarely make it to the toilet when it’s puking time. Plus, adults are smart enough to keep their opinions to themselves so they rarely complain about the foul tasting poison, aka “girl” rum, that marketing companies have convinced the general public make for tasty beverages, but children, especially the eight and under crowd, mewl and wine the second you and a buddy hold one down and start funneling grain alcohol down their throat.

Don’t ask me what it is about bars that people love so much; if it’s the liquor, I can get drunk faster and cheaper by drinking mouthwash in my hall closet, or, as I like to call it, the Wednesday morning ritual. If it’s the socializing, then why not join some kind of club or have a good, old fashioned gang bang.

I imagine it has something to do with the crowds; for whatever reason, people like crowds.

It’s true, and you can test this theory. Call up a few friends and stand around in a closed circle, eventually, more people will pile in behind you and ask you at what you’re staring. Soon, there’ll be a mob so thick that the people in the back won’t even be able to see you, but they’ll stand with the crowd anyway just because they don’t know what else to do. The police will break it up, especially if you’re doing this in a mall or some similar public-private place, and everyone there will wonder why our eventual alien overlords will treat us the way we treat cows, sheep, and the several diverse kinds of edible monkey.

People love crowds.

Everybody knows the best time to go to the beach is not in the height of summer, when everybody and their mother takes their flabby selves out to where dirt meets water, but in the middle of winter; just like you don’t jump in a gang bang when everybody’s still fresh and squirming around, you wait until everyone has had their turn before you get in there and do your business.

Sure, it’s a little soggy, but it’s still good.

I can’t stand crowds or crowded places. Other people not only increase the temperature of any crowded area into which they pack themselves, but there’s a good chance that, if so many people are interested in doing an activity, it’s probably a pretty stupid thing to do; for example, people who stand online outside a retailer to buy a new movie, book, piece of software, video game console, etc. when they could get it hassle free, and usually for a lower price, a few weeks later.

I understand that everyone is anxious to be first, and no one likes to wait, but there are plenty of other things to do in the meantime.

What about swindling the elderly? Instead of wasting your time in a line to get the next Xbox, why not scam old folks out of their retirement money? Or why not ruin weddings? Just go around from church to church and spoil people’s special days by insinuating that you slept with the bride or groom or both.

I understand that not everyone can be an individual, and that being an individual is not the same thing as being useful, but you’d think that for a species that prides itself on freedom of choice, rational thinking, and individuality, we’d be able to think of something to do where we don’t have to stand shoulder to shoulder and front to back with the world’s sweatiest, stinkiest, fattest, and pointiest families just to ride a roller coaster, see a movie, or have a fucking drink.

We’re social animals, I get it. Apart from watching people fuck, most of the time wasted on the internet is spent communicating with other hairless apes around the globe. We need human contact to keep us from going completely bat-shit crazy and doing something stupid like shaving our elbows or believing Fox News; however, there comes a point when we have to look at a throbbing herd of people and say “Enough is enough.”

They use electric shock prods to get cows into high density feed lots, but people are willing to pay out the ass to stand in a seven hour line for the Pirates of the Caribbean ride at Disney World.

The older I get, the less comfortable I feel around all the rest of you. It seems ridiculous to walk around in these clothes, or trade metal and paper with one another in exchange for food, drugs, and sexual favors. There has to be a better way to spend our time than standing in a room full of strangers, drinking ethyl alcohol, playing darts, and listening to the same three songs over and over and over again.

The least they could do is let people pee everywhere. Just put a drain in the middle of the bar and slant the floor downwards. I’d feel much better about paying six dollars a bottle for a Corona if I knew that everyone was standing in a puddle of my urine.

This month's Mixology Monday, themed Local Flavor, is hosted by Kevin over at Save the Drinkers (I didn't know that I needed saving). The idea is that we use ingredients that represent the city that we come from, or that we use an older recipe from our respective city and attempt to revive it.

I'm a Canadian, in every sense of the word, as I've spent time in most of our major cities, from coast to coast. So, in that vein, I'm going to start by renaming this month's MxMo XXX: Local Flavor to MxMo:XXX Local Flavour, in order to get into true Canadian form. Now that my "u" is properly placed and I've warmed up my fingers on the keyboard (aboot, oot, toque, cheque, poutine, eh? to zed, Kokanee) let's get down to the fun stuff: drinking.

Since I was born in Montreal, Quebec, I've decided to start off with two cocktails from La Belle Province:

Martin Casa

2 oz Jamaica rum
½ oz Apricot Brandy
½ oz Cointreau
juice ½ lime
stir with ice and strain into a chilled cocktail glass
circa 1945, Café Martin, Montreal

A variation of the Leap Frog, this libation is made even better with the addition of a dash of bitters. Ensure that you are using a quality apricot brandy as well, as a cheap version just doesn't do this creation justice.

Habitant

3 parts rye
1 part lemon juice
1 part maple syrup
dash bitters
shake with ice and strain into a chilled cocktail glass
circa 1945, Larry Denis, Seigniory Club, Quebec

What's a Canadian cocktail if maple syrup isn't involved? The Habitant is a simple Whiskey Sour with maple syrup in place of the simple: often heaven can be found in the simpler things in life.

On to the West (or Left) coast we find that the white spirits are preferred, and in the case of these two recipes: gin. As Vancouver was the last Canadian city that I lived in, and also the place that I'd consider home, the next two cocktails hail from this beautiful cosmopolitan host of the 2010 Olympics.

Hotel Georgia

2 parts gin
1 part orgeat
½ part lemon juice
10 drops orange blossom water
1 egg white
shake hard with ice and strain into a chilled cocktail glass
circa 1945, Hotel Georgia, Vancouver

The Hotel Georgia, currently under a massive renovation, first opened in 1927. The recipe supplied here is an odd one, but I find that if you dramatically reduce the orgeat you'll find yourself with an elegant summer sipper.

Vancouver

1 ½ gin
¾ oz sweet vermouth
¼ oz Benedictine
2 dashes orange bitters
stir with ice and strain into a chilled cocktail glass
origin unknown, source: Stan Jones Complete Bar Guide, 1977

The Vancouver cocktail is right up my alley: a twist on the Martinez with Benedictine instead of maraschino. If you prefer a drier cocktail, by all means pump up the gin to a full two ounces.

There you have it another MxMo under our belt and four cocktails to choose from. If you live in the States as you imbibe one of these Canadian creations be sure to keep this tidbit of trivia in mind as you patrol the southern border: the US is Canada's Mexico, complete with stronger currency! Discuss....

Santé!
