<p align="left"><span style="font-size:small;"><span>So let me go over the benefits of Quinoa before I get to the recipe. It is considered to be a grain but is actually related to spinach, swiss chard. It originates from Peru. </span></span></p>

<p align="left"><span style="font-size:small;"><strong><strong>Quinoa, Zucchini and Corn Enchiladas (Serves 4)</strong></strong></span></p>
<p align="left"><span style="font-size:small;"><span>½ C quinoa, rinsed if needed&#60;/span</span></span></p>
<p align="left"><span style="font-size:small;"><span>½ tsp salt</span></span></p>
<p align="left"><span style="font-size:small;"><span>1 C water</span></span></p>
<p align="left"><span style="font-size:small;"><span>2 T canola oil</span></span></p>
<p align="left"><span style="font-size:small;"><span>1 small yellow onion, diced</span></span></p>
<p align="left"><span style="font-size:small;"><span>1 jalepeno, remove seeds and dice</span></span></p>
<p align="left"><span style="font-size:small;"><span>2 medium zucchini, dice into ½ inch </span></span></p>
<p align="left"><span style="font-size:small;"><span>1 chipotle chile in adobe sauce, minced</span></span></p>
<p align="left"><span style="font-size:small;"><span>1 garlic clove, minced</span></span></p>
<p align="left"><span style="font-size:small;"><span>1 C corn kernels (thaw if frozen, drain if from can)</span></span></p>
<p align="left"><span style="font-size:small;"><span>3 ½ C enchilada sauce (28-0z can) or make your own</span></span></p>
<p align="left"><span style="font-size:small;"><span>8 flour tortillas (7-inch fajita size), warmed</span></span></p>
<p align="left"><span style="font-size:small;"><span>1 C Montery Jack or pepper jack cheese, shredded</span></span></p>
<p align="left">
<p align="left"><span style="font-size:small;"><span>Preheat your oven to 375 degrees. Put quinoa in a small pan with water and salt. Bring to simmer. Reduce heat and cover. Cook 10-15 minutes or until liquid is absorbed.  Set aside.</span></span></p>
<p align="left">
<p align="left"><span style="font-size:small;"><span>Heat oil in skillet over medium heat. Add onion, jalepeno, chipotle. Saute 5-7 minutes. Add garlic and zucchini. Saute another 5-7 minutes. Stir in corn and cook 1 minute longer. Season with additional salt and pepper. Remove from heat. Stir in quinoa. </span></span></p>

<p align="left"><span style="font-size:small;"><span>Spray 13x9 baking dish with cooking spray. Spread half of the enchilada sauce in the bottom of the dish. Put warmed tortilla on counter top. Put 1/3 C of quinoa-zucchini filling on tortilla. Roll up and place in baking dish with the seam side down. Repeat with remaining tortillas.</span></span></p>

<p align="left"><span style="font-size:small;"><span>Pour remaining sauce over tortillas. Cover with aluminum foil. Bake for 15 minutes. Remove foil. Sprinkle cheese over enchiladas and bake uncovered until the cheese has melted and the enchiladas are bubbling, 5-7 minutes. Serve hot.</span></span></p>

<p><em>The benefits of antioxidants are becoming well known.  By absorbing free-radicals, they can slow down the aging process, help prevent and fight cancer and heart conditions, and generally promote vibrant health and well-being.</em></p>
<p><em><strong>Why do we need antioxidants?</strong></em></p>
<p>Our body's cells are constantly being damaged by free-radicals (sometimes called 'oxygen-free radicals') which are produced naturally as a by-product of metabolism and also from exposure to radiation from the sun and pollutants. These are highly reactive molecules which trigger oxidation. Damage from free-radicals is linked to cancer, cardio-vascular disease, rheumatoid arthritis, chronic fatigue and other age-related diseases such as Alzheimers and Parkinsons disease.  Antioxidants work by binding to the free-radicals, effectively mopping them up before they cause any damage.<!--more--></p>
<p><em><strong>Where do we get antioxidants?</strong></em></p>
<p>Fresh fruit and vegetables are the biggest source of dietary anti-oxidants. Fresh is important because when food is cooked or ages it loses its antioxidant properties. Diets heavy in processed foods are low in antioxidants and can be high in free-radicals. The general scientific consensus used to be that five portions of fresh fruit and veggies give us what the body needs. However modern life-styles expose us to more pollutants, pesticides and radiation than before.  Factors such as stress, smoking, drinking coffee and lack of sleep also increase our need for antioxidants, so nowadays nutritionists recommend more - in fact the equivalent of 10 servings of fresh fruit and vegetables per day.  Most people find this difficult, and so look for super-foods or other food supplements.</p>
<p><em><strong>Superfoods or synthetic supplements?</strong></em></p>
<p>Pharmacies and supermarket shelves are full of antioxidant pills and capsules. However, while isolated nutrients may have powerful antioxidant benefits in the laboratory test tube, they rarely have significant benefits in the living body. Synthetic antioxidants appear to be so ineffective that they may actually increase cancer risk - possibly by interfering with the body's own mechanisms for dealing with antioxidants. In fact, every large clinical trial that has used isolated antioxidant nutrients has failed to show benefit for cancer and cardiovascular disease. On the other hand, foods high in antioxidants have proven benefits. It is known that a diet rich in fruits and vegetables can help prevent cancers, coronary heart disease and strokes.</p>
<p><em><strong>How do we measure antioxidant levels?</strong></em></p>
<p>ORAC, short for Oxygen Radical Absorbance Capacity, is the standard measurement of the total antioxidant power of a food.  The more free radicals absorbed, the higher the ORAC score. Nutritionists recommend we consume around 5000 ORAC units per day to significantly impact antioxidant activity in the body.  Half a cup (one serving) or fruit or vegetables provides around 500 ORAC units - hence the recommendation for 10 servings per day.</p>
<p><em><strong>The 10 most powerful antioxidant superfoods</strong></em></p>

<li><strong>Raw Cacao</strong> (chocolate) contains the antioxidant polyphenols, epicatechin and gallic acid and provides more than 21 times the free radical protection of green tea. <li><strong>Raspberry</strong> - contains the polyphenol antioxidant, ellagic acid, shown to reduce heart disease, birth defects and liver problems, as well as having cancer-fighting properties.</li>
<li><strong>Strawberry</strong> - a rich source of the polyphenol antioxidants, quercetin, ellagic acid and anthocyanin. Quercetin has been shown to protect against cancers of the colon, breast, ovaries and gastrointestinal system, as well as protecting from strokes, cataracts, viruses and allergies.</li>

<title><![CDATA[Uppfluffad död glass :-(]]></title>

<content:encoded><![CDATA[<p>Sommaren är glasstider framför andra. Vad gör man när man inser att det inte finns en glass att köpa i butiken som smakar sådär fantastiskt som man tyckte förr. Bara att vänta till dess man är hemma, tråkigt nog. Visst vore det underbart om det fanns en glass i glassdisken som smakade rent, som inte lade sig som ett lock i halsen på grund av förtjockningsmedel och mjölkprodukter och som faktiskt smälte om man inte åt nog snabbt. Har ni tänkt på hur glass reagerar när den smälter. Det finns glass som när den legat på ett fat nog länge för att smälta fortfarande har sin forna form kvar, i stort sett, den har bara säckat ihop en aning läckt ut lite vätska på fatet. Igår gjorde jag en glass på banan, jordgubbar, cashewsmör och sötade lite extra med agave. Mmmmmm. Rena smaker som lämnade halsen obesvärad. Toppa gärna med lite nötmysli.</p>
<p>Annars har det slunkit ner lite av varje i helgen. På festival kan man inte vara alltför nogräknad, då får man svälta. Forum för poesi och prosa i Karlstad gjorde lite reklam för sig och två av oss tre som var där läste egen poesi.<br />
Det var tjugo år sedan jag var på festival senast så det kändes lite skoj faktiskt, även om vi inte tillhörde de yngre på området :-) Men mysigt var det i vilket fall som helst. Tyvärr missade jag Ismael Ataria som intog scenen på fredagen. Alltså får jag nöja mig med att läsa hans blogg som definitivt har sina ljusa sidor och glimtar av stor insikt.</p>
